Check out the Wood Run Mountain Bike Trail System in the UWHARRIE NATIONAL FOREST. The site also has a rudimentary, but usable map. Wood Run Trailhead is located on NC 24/27 between Albemarle and Troy and two miles east of Bridges over Lake Tillery / Pee Dee River.

The NC Mountain Biking Trails Authority, has a pretty thorough list of trails.
The site is divided into three sections, West, Central, and Eastern North Carolina. But you should just go to his Favorite Rides in Each Region page to get the good stuff!

The Tsali trail system is located in the Nantahala National Forest just outside of Bryson City, NC. There are four trails that offer a total of about 35 miles of riding. The trails are shared with horses, as a result only two trails are open to mountain bikers a day. Trail use alternates to minimize conflicts between bikes and horses. These trails are considered the best in the southeast and among the best in the country. They are among my favorites. The trails are in general hard packed and fast. Most of the climbing is moderate, but there are some steep sections. The downhills are very fast and a lot of fun. The trails vary from very smooth to rutted and rooty but overall are in very good condition. This is one place I would say not to miss. Here is a map of the trail system at Tsali.
